[재료]

[배추김치]
절인배추 12kg
굴 1kg
물(찹쌀풀용)1.5L
찹쌀가루100g
소고기다시다 2큰술(20g)
MSG 2큰술(20g)
굵은고춧가루 750g
다진마늘 500g
새우젓 350g
다진생강 25g
멸치액젓 500g
꽃소금 75g
설탕 200g
무 1.5kg
쪽파 700g
홍갓 500g
청갓 700g
알타리무청 6줄기
당근 1/3개(80g)
미나리 200g

[배추 절이기]
배추 3포기
천일염(소금물용) 3컵
천일염 적당량
물 3L

[이북식 김치]
천일염 1/2컵
물 1L
김치속 적당량
절인배추 1과1/2포기

[막김치]
배추 1/2포기
무 1/3개(300g)
천일염 1/2컵
소금물 2컵(360g)
김치속 적당량

[배추김치 만드는 법]

1. 물에 찹쌀가루를 넣어 풀어준다.
2. 풀어 둔 찹쌀물을 냄비에 붓고 중불에서 바닥을 긁어가며 끓인다.
3. 찹쌀 풀에 소고기 다시다 2 큰 술을 넣어 섞어준다.
4. 찹쌀 풀의 농도가 잡히면 고춧가루, MSG를 넣어 섞어준다.
5. 무는 채칼을 이용하여 썰어준다.
6. 채 썬 무에 꽃소금, 멸치 액젓, 새우젓을 넣어 절여준다.
7. 갓은 뿌리를 제거하고 줄기 부분은 3cm, 이파리는 2cm 정도 길이로 자른다.
8. 무청, 쪽파는 3cm 길이로 잘라 준비한다.
9. 당근은 채 칼을 이용하여 썰어준다.
10. 손질해둔 채소에 절여둔 무, 불린 고춧가루, 간 마늘, 한 생강, 황설탕을 넣어 섞어준다.
11. 절인 배추에 김칫소를 한 장 한 장 얇게 발라준다.
12. 골고루 양념이 묻으면 김칫소가 나오지 않게 배추의 모양을 잡고 큰 이파리로 감싼다.
13. 김치통에 담은 후 꾹꾹 눌러 틈이 생기지 않게 한다.
14. 김치통이 채워지면 남은 절인 배추 이파리로 김치를 덮어 보관한다.

[배추 절이는 법]

1. 배추는 밑동을 잘라내 거 겉 잎을 뜯어낸다.
2. 배추를 반으로 가른다.
3. 큰 냄비나 볼에 물과 천일염을 넣어 소금물을 만든다.
4. 배추 줄기 부분에 천일염을 문질러 가며 골고루 절여준다.
5. 천일염으로 문질러 둔 배추를 소금물에 담가 골고루 묻혀준다.
6. 배추의 절단 부분이 위로 올라오게 하여 김장봉투에 담아준다.
7. 한 번씩 뒤집어 가면서 골고루 절여질 수 있도록 해준다.

[이북식 김치 만드는 법]

1. 큰 볼에 물, 천일염을 넣어 소금물을 만든다.
2. 소금이 녹으면 김치 속을 넣어 섞어준다.
3. 절인 배추를 김치 물에 넣어 골고루 적셔준다.
4. 김치통에 적신 배추를 담고 김 핏물을 부어 익혀준다.

[막김치 만드는 법]

1. 배추, 무는 한 입 크기로 잘라 천일염, 소금물을 넣어 버무려 준다.
2. 중간중간 섞어가며 골고루 절여준다.
3. 절여진 배추는 찬물에 헹궈 짠맛을 빼준다.
4. 김치 속을 넣어 버무린 후 통에 담아 보관한다.

Glutinous rice powder 100g\r
Beef stock powder 2 tbsp (20g)\r

Coarse red pepper powder 750g\r
Minced garlic 500g\r
Salted shrimp 350g\r
Minced ginger 25g\r
Fish sauce 500g\r
Fine salt 75g\r
Sugar 200g\r
Radish 1.5kg\r
Scallion 700g\r
Red mustard 500g\r
Green mustard 700g\r
Young radish leaf 6 stems\r
1/3 carrot (80g)\r
Water parsley 200g\r

[Brining cabbages]\r
Napa cabbage 3 heads\r
Bay salt (for salt water) 3 cup\r
Some bay salt\r
Water 3L\r
\r
[North Korean-style kimchi]\r
Bay salt 1/2 cup\r
Water 1L\r
Some sauce\r
Brined cabbage 1\u00261/2 head\r
\r
[Sliced kimchi]\r
Napa cabbage 1/2 head\r
1/3 radish (300g)\r
Bay salt 1/2 cup\r
Salt water 2 cup (360g)\r
Some sauce\r

[How to make kimchi]\r

1. Dissolve glutinous rice power in water.\r
2. Pour the glutinous rice paste into a pot and let it boil over medium heat. Keep stirring while boiling.\r
3. Add 2 tbsp of beef stock powder to the glutinous rice paste and mix.\r
4. Once the paste thickens, add red pepper powder and MSG.\r
5. Julienne the radish with a mandoline.\r
6. Add fine salt, fish sauce, and salted shrimp to radish slices and let them brine.\r
7. Trim the roots off mustard, cut the stem into 3-cm long and leaf into 2-cm long pieces.\r
8. Cut the radish leaf and scallion into 3-cm long pieces.\r
9. Julienne the carrot with a mandoline.\r
10. Mix brined radish slices, soaked red pepper powder, minced garlic, minced ginger, and brown sugar with cut vegetables to make the sauce.\r
11. Thinnly spread the sauce on each piece of brined napa cabbage.\r
12. Once the sauce is thoroughly mixed with napa cabbage, wrap the cabbage with a large leaf to keep the sauce in place.\r
13. Put the napa cabbages in a container and press down firmly to keep air out.\r
14. Once the container is filled, fill in the gaps and cover with brined napa cabbage for storage.\r

[How to brine napa cabbage]\r

1. Trim off the bottom of napa cabbage and remove the outermost leaf.\r
2. Cut the napa cabbage in half.\r
3. Make salt water by mixing water and salt in a large pot or bowl.\r
4. Rub bay salt onto the stem part of napa cabbage for brining.\r
5. Place the napa cabbage rubbed with bay salt in the salt water and let it soak.\r
6. Place the brined napa cabbage upside down in a bag so that the bottom is facing up.\r
7. Stir every once in a while to let it brine thoroughly.\r

[How to make North Korean-style kimchi]\r

1. Make salt water by mixing water and bay salt in a large bowl.\r
2. Once the salt is dissolved, add the kimchi sauce.\r
3. Put the brined napa cabbage in kimchi sauce water and soak well.\r
4. Place the kimchi in a container and pour in kimchi sauce water to ferment.\r

[How to make sliced kimchi]\r
\r
1. Cut the napa cabbage and radish into bite sizes and mix with bay salt and salt water.\r
2. Stir every once in a while to let it brine thoroughly.\r
3. Rinse the brined napa cabbage with cold water to remove some saltiness.\r
4. Mix the napa cabbage and radish with the sauce and store in a container.
